Ingredients

Protein

  • 1 lb medium shrimp, peeled and deveined

Carbohydrate

  • 2 cups cooked jasmine or brown rice

Sauces & Condiments

  • 0.5 cup mayonnaise
  • 1-2 tablespoons sriracha (to taste)

Vegetables

  • 1 avocado avocado, sliced
  • 1 cup shredded carrots
  • 1 cup cucumber slices

Instructions 

  • Mix mayonnaise with sriracha and lime juice to make spicy mayo.
  • Heat olive oil and cook shrimp with spices for 3-4 minutes per side until pink.
  • Assemble bowls with rice, then top with shrimp, carrots, avocado, and cucumber. Drizzle with spicy mayo.
