Ingredients

summer squash, cut into 1/2-in cubes

russet potatoes, cut into 1/2-in cubes

corn, husks and silk removed and kernels cut off the cob

Instructions
Preheat oven to 400°F (200°C). Spray a sheet pan with cooking spray.
Combine onion, garlic, squash, zucchini, potatoes, corn, and melted butter in a bowl; season with salt and pepper.
Spread vegetables on the sheet pan and roast for 35-40 minutes, stirring halfway.
Make four nests in the hash, crack an egg into each, and bake for 5-8 minutes until eggs are set.
Sprinkle with Parmesan and green onions; serve warm.
Notes
For extra flavor, add a pinch of smoked paprika or hot sauce.
