A delicious and easy sheet pan dinner combining tender chicken with roasted butternut squash and Brussels sprouts, glazed with a sweet and tangy maple mustard sauce.

Ingredients

Protein

  • 1 1/4 pounds boneless skinless chicken breasts
  • 1 tablespoon olive oil

Vegetables

  • 3 cups cubed butternut squash
  • 2 cups halved brussels sprouts

Sauce

  • 2 tablespoons dijon mustard
  • 2 tablespoons maple syrup
  • 1 teaspoon dried rosemary

Instructions 

  • Preheat oven to 425°F (220°C). Line a sheet pan with foil or spray with cooking spray.
  • Whisk together mustard, maple syrup, rosemary, salt, and pepper to make the sauce.
  • Toss vegetables with olive oil, salt, and pepper; spread on the pan. Season chicken and brush with half the sauce. Roast for 15 minutes.
  • Remove from oven, brush chicken with remaining sauce, drizzle remaining sauce over vegetables, and roast for another 5-10 minutes until cooked through.

Notes

Ensure chicken reaches an internal temperature of 165°F (74°C) before serving.
