A delicious and easy sheet pan meal featuring tender salmon glazed with maple syrup, roasted Brussels sprouts, and a flavorful balsamic-mustard sauce.
Ingredients

1.5poundsBrussels Sprouts
1/2 to 3/4teaspoonkosher salt
1tablespoonavocado oil or grapeseed oil
1/4 cup + 1 tablespooncupreal maple syrup
3 to 4tablespoonsDijon mustard
1tablespoonbalsamic vinegar
2tablespoonssoy sauce
1/4teaspoonblack pepper
12ouncessalmon (wild caught, when possible)
1teaspoonkosher salt
1teaspoonavocado or grapeseed oil
Garnish (optional)
to tastefresh thyme leaves(for garnish)
Instructions
Preheat oven to 400°F. Trim and halve Brussels sprouts, then toss with salt and oil on a baking sheet.
Roast Brussels sprouts for 10-15 minutes until nearly done. Meanwhile, simmer maple syrup, mustard, vinegar, soy sauce, and pepper until thickened, then set aside.
Remove Brussels sprouts from oven, push to edges, brush center with oil, place salmon in center, brush with glaze, and bake for 8-10 minutes until flaky.
Transfer salmon and Brussels sprouts to plates, garnish with thyme if desired, and serve with extra glaze.
Notes
If the glaze thickens too much, stir in an extra tablespoon of maple syrup to thin it out.
