A nutritious and flavorful bowl combining tender chicken, fluffy quinoa, and fresh vegetables, perfect for a healthy meal.

Ingredients

Grains

  • 1 cup quinoa
  • 2 cups chicken broth

Protein

  • 2 pieces chicken breasts, diced

Fats & Oils

  • 2 tablespoons olive oil

Herbs & Spices

  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder

Vegetables

  • 1 cup cherry tomatoes, halved
  • 1 piece cucumber, diced
  • 0.25 cup fresh parsley, chopped

Fruits

  • 1 whole lemon (juice of 1 lemon)

Instructions 

  • Rinse quinoa under cold water.
  • Combine quinoa and chicken broth, bring to a boil, then simmer for 15 minutes.
  • Cook chicken in olive oil with herbs until golden.
  • Mix cooked quinoa, chicken, tomatoes, cucumber, and parsley in a bowl, then add lemon juice.

Notes

Feel free to add more herbs or adjust seasoning to taste.
