Ingredients

Liquid Egg Whites

  • 1 cup liquid egg whites

Tortilla

  • 1 large whole wheat tortilla

Vegetables

  • 0.25 cup diced bell peppers
  • 0.25 cup fresh spinach

Olive Oil

  • 1 tablespoon olive oil

Cheese

  • 0.25 cup shredded mozzarella cheese

Seasonings

  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions 

  • Heat olive oil in a skillet over medium-low heat. Sauté bell peppers and spinach until softened, then remove.
  • Pour egg whites into the skillet, season with salt and pepper, and cook until just set.
  • Return vegetables to the pan and stir to combine. Warm the tortilla until pliable.
  • Place egg mixture in the center of the tortilla, sprinkle with mozzarella, fold sides, and roll into a wrap.
  • Serve immediately or wrap for later.
