Instructions
Heat olive oil in a skillet over medium-low heat. Sauté bell peppers and spinach until softened, then remove.
Pour egg whites into the skillet, season with salt and pepper, and cook until just set.
Return vegetables to the pan and stir to combine. Warm the tortilla until pliable.
Place egg mixture in the center of the tortilla, sprinkle with mozzarella, fold sides, and roll into a wrap.
Serve immediately or wrap for later.
