Ingredients

Salmon Fillets

  • 4 pieces center-cut salmon fillets (170g each), skin-on
  • 1 teaspoon Kosher salt
  • 0.5 teaspoon cracked black pepper
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 3 cloves garlic, grated or finely minced
  • 2 tablespoons fresh dill, finely chopped
  • 1 teaspoon lemon zest
  • 2 tablespoons Greek yogurt

Instructions 

  • Pat the salmon dry and season with salt and pepper. Let sit for 10 minutes.
  • Mix melted butter, olive oil, lemon juice, and garlic; add dill last.
  • Preheat grill to medium-high. Grill salmon skin-side down for 6 minutes until crispy.
  • Flip and cook for 3-4 minutes, brushing with sauce. Check for firmness and internal temp of 54°C.
  • Rest for 5 minutes before serving.
