Enjoy these flavorful and easy-to-make burritos filled with shredded rotisserie chicken, beans, rice, and fresh toppings.

Ingredients

Tortillas

  • 4 large flour tortillas
  • 500 g shredded rotisserie chicken
  • 2 tablespoons cooking oil
  • 1 small onion (finely diced)
  • 2 tablespoons fajita seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 400 g mixed beans in chili sauce
  • 250 g pre-cooked rice
  • 75 g finely grated cheddar cheese
  • 2 tablespoons pickled jalapeños (chopped)
  • A small bunch fresh coriander (chopped)
  • 4 teaspoons tomato salsa
  • 4 teaspoons sour cream
  • 1 little gem lettuce torn into leaves

Instructions 

  • Shred the chicken, then cook with onion, fajita seasoning, salt, and pepper for 5-6 minutes.
  • Heat beans separately and mash gently, then combine with chicken mixture for 5 minutes.
  • Warm rice and tortillas; assemble by spreading rice on tortillas, adding chicken, beans, and toppings.
  • Fold and roll the tortillas into burritos, then wrap in foil to serve.

Notes

For easier rolling, warm tortillas and rice before assembling.
