This vegan oat cake is moist, healthy, and easy to make, perfect for a nutritious dessert or snack.

Ingredients

Dry ingredients

  • 1 ¾ cups cups oat flour (175g)
  • ½ cup cups almond flour (60g)
  • 2 teaspoons teaspoons baking powder
  • ½ teaspoon teaspoon baking soda
  • ½ teaspoon teaspoon salt
  • 1 teaspoon teaspoon cinnamon

Wet ingredients

  • ¾ cup cups unsweetened plant-based milk (180ml)
  • ⅓ cup cups maple syrup (80ml)
  • ⅓ cup cups melted coconut oil (80ml)
  • 1 tablespoon tablespoon flaxseed meal + water (flax egg)
  • 3 tablespoons tablespoons water (for flax egg)
  • 1 teaspoon teaspoon vanilla extract
  • ½ cup cups unsweetened applesauce (120g)

Instructions 

  • Preheat oven to 350°F (175°C) and prepare the pan.
  • Mix dry ingredients in a bowl and whisk well.
  • Whisk wet ingredients until smooth.
  • Combine wet and dry, then pour into the pan and bake for 30 minutes.
  • Cool for 10 minutes, then slice and serve with toppings.

Notes

You can add raisins, nuts, or chocolate chips for extra flavor.
