Ingredients

Spring Roll Wrappers

  • 6 pieces rice spring roll papers

Vegetables

  • 1 piece red pepper, thinly sliced
  • 2 pieces carrots, thinly sliced
  • 1 piece yellow bell pepper, thinly sliced
  • 1 large bunch mint leaves
  • 1 large bunch cilantro
  • ¼ cup red cabbage, thinly sliced

Ginger Peanut Sauce

  • 0.5 cup peanut butter
  • 1.5 tbsp low sodium soy sauce
  • 1 tbsp raw honey
  • 2 tbsp freshly squeezed lime juice
  • 0.5 tsp chili paste
  • 1 tsp fresh grated ginger

Instructions 

  • Soak each rice paper in warm water until soft, then lay flat.
  • Arrange sliced vegetables and herbs on the lower third of each wrapper.
  • Roll tightly from the bottom, folding in sides as you go.
  • Mix peanut butter, soy sauce, honey, lime juice, chili paste, and ginger to make the sauce.
  • Serve spring rolls with ginger peanut sauce for dipping.

Notes

Keep the rolls moist by covering with a damp cloth until serving.
