These delicious zucchini pizza bites are perfect for a quick, crowd-pleasing appetizer at graduation parties. They combine fresh zucchini with cheesy toppings for a flavorful bite-sized treat.

3mediumzucchini(sliced into 1/4 inch rounds)
1cuppizza sauce(store-bought or homemade)
1.5cupsshredded mozzarella cheese
0.5cupmini pepperoni or regular pepperoni(cut into quarters)
0.25cupgrated Parmesan cheese
1tspItalian seasoning
0.5tspgarlic powder
0.25tspred pepper flakes(optional)
1tbspolive oil

Instructions
Preheat oven to 425°F (220°C) and line baking sheets with parchment paper.
Slice zucchini into 1/4 inch (0.6 cm) rounds and arrange on baking sheets. Brush with olive oil and season with salt, pepper, and garlic powder.
Roast zucchini for 8 minutes to remove moisture. Remove from oven.
Top each zucchini round with 1/2 teaspoon pizza sauce, then sprinkle with mozzarella, add pepperoni, and season with Italian seasoning.
