These delicious zucchini pizza bites are perfect for a quick, crowd-pleasing appetizer at graduation parties. They combine fresh zucchini with cheesy toppings for a flavorful bite-sized treat.

Ingredients

Vegetables

  • 3 medium zucchini (sliced into 1/4 inch rounds)
  • 1 cup pizza sauce (store-bought or homemade)
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cup mini pepperoni or regular pepperoni (cut into quarters)
  • 0.25 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 0.5 tsp garlic powder
  • 0.25 tsp red pepper flakes (optional)
  • 1 tbsp olive oil
  • to taste salt and black pepper
  • for garnish fresh basil leaves (optional)

Instructions 

  • Preheat oven to 425°F (220°C) and line baking sheets with parchment paper.
  • Slice zucchini into 1/4 inch (0.6 cm) rounds and arrange on baking sheets. Brush with olive oil and season with salt, pepper, and garlic powder.
  • Roast zucchini for 8 minutes to remove moisture. Remove from oven.
  • Top each zucchini round with 1/2 teaspoon pizza sauce, then sprinkle with mozzarella, add pepperoni, and season with Italian seasoning.
  • Bake for another 10-12 minutes until cheese is bubbly and golden. Finish with Parmesan, red pepper flakes, and basil leaves before serving.

Notes

For extra flavor, add a drizzle of balsamic glaze before serving.
