Ingredients

Meat

  • 1 lb flank steak (Marinate with spices and oil)

Grains

  • 2 cups cooked rice

Oils & Spices

  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin

Vegetables & Legumes

  • 1 cup black beans, drained and rinsed
  • 1 cup corn, cooked
  • 1 cup diced tomatoes

Fruits & Garnishes

  • 1 avocado sliced avocado

Herbs & Condiments

  • Fresh cilantro, for garnish
  • Sour cream, for serving
  • Salsa, for serving

Instructions 

  • Mix olive oil, chili powder, cumin, salt, and pepper. Marinate the steak for at least 30 minutes.
  • Grill or pan-fry the steak until desired doneness, then let rest and slice.
  • Layer cooked rice in a bowl, then top with sliced steak and vegetables.
  • Garnish with cilantro, and serve with sour cream and salsa on the side.
