Ingredients

Protein

  • 1 lb chicken breast (sliced)

Vegetables

  • 2 medium bell peppers (mixed colors (red, yellow))
  • 1 medium zucchini (sliced)

Olives

  • 1/2 cup olives (pitted and sliced)

Aromatics & Seasonings

  • 3 cloves garlic (minced)
  • 2 tbsp olive oil (for sautéing)
  • 1 tsp oregano (dried)

Seasoning

  • to taste salt and pepper (for seasoning)

Instructions 

  • Heat 2 tbsp olive oil in a skillet over medium-high heat.
  • Add sliced chicken; cook 5-7 minutes until golden and cooked through.
  • Stir in bell peppers and zucchini; cook 3-4 minutes until tender-crisp.
  • Add garlic and olives; sauté 1 minute until fragrant.
  • Sprinkle oregano, salt, and pepper; stir to combine. Serve warm.
