Ingredients

Dough

  • 3 and 1/4 cups all-purpose flour
  • 5 tbsp milk (warm)
  • 2 and 1/4 tsp instant yeast
  • 1 tbsp sugar
  • 1 egg egg (room temperature)
  • 3/4 cups + 1 tbsp cups pumpkin puree (canned or homemade)
  • 1 tsp salt
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter (softened)
  • 2 tbsp black and white sesame seeds (optional, for topping)

Instructions 

  • Mix flour, yeast, sugar, and salt. Add pumpkin, milk, egg, and oil; knead until smooth.
  • Let dough rise in a warm place for 60-90 minutes until doubled.
  • Punch down dough, roll into a rectangle, spread butter, fold, and roll out again. Repeat with remaining butter.
  • Divide into 8 pieces, shape into bagels, and let rise for 20-40 minutes.
  • Preheat oven to 350°F (180°C). Brush bagels with milk, sprinkle sesame seeds, and bake for 15-20 minutes until golden.

Notes

For a richer flavor, toast sesame seeds before topping.
