Delicious and energizing lemon coconut protein bars perfect for a healthy snack on the go.
Ingredients
dry ingredients

protein powder

almond meal

coconut flour

cup
desiccated coconut
wet ingredients

biodynamic, organic or free range eggs
(or 3 chia gel eggs for vegan)

maple syrup

cup
freshly pressed lemon juice (including pulp)

chia seeds
(omit if using chia eggs)

coconut or dairy milk
(optional)
zest from one lemon

Instructions
Preheat oven to 180°C, grease and line a 20x20cm baking tin.
Mix dry ingredients in a large bowl; set aside.
Beat eggs until pale; add maple syrup, lemon juice, zest, and chia seeds, mixing well.
Combine wet and dry mixtures gently; add milk if needed for moisture.
Pour batter into prepared tin, smooth surface, and bake for 30 minutes.
Cool completely, then cut into 12 bars.
Notes
Store in an airtight container for up to 3 days.
