Delicious and healthy protein cookies perfect for a quick snack or post-workout treat.

Ingredients

Dough

  • 1 cup creamy natural peanut butter
  • ½ cup Puori vanilla whey protein powder ((50g))
  • ½ cup brown sugar ((100g))
  • ¼ cup Greek yogurt (2% or full-fat vanilla or plain)
  • 1 large egg
  • ½ teaspoon baking soda
  • cup semi-sweet chocolate chips (plus more for topping)

Instructions 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment.
  • Microwave peanut butter for 20 seconds, stir until smooth.
  • Mix peanut butter, protein powder, sugar, yogurt, egg, and baking soda. Fold in chocolate chips.
  • Form dough into 10 mounds on the sheet, shape into cookies, top with extra chips if desired.
  • Bake for 10-12 minutes until golden and set. Cool for 10 minutes before serving.

Notes

Store in an airtight container for up to 5 days or freeze for longer storage.
