Ingredients

Fruits

  • 3 pieces apples (divided — 2 grated, 1 diced)
  • 1 teaspoon cinnamon (plus optional ¼ tsp nutmeg)
  • 0.25 teaspoon nutmeg (optional)
  • 0.5 cup sugar (can go down to ¼ cup for less sweetness)
  • 1 tablespoon sugar (for marinade) (for marinating apples)
  • 2 large eggs
  • 0.67 cup Greek yogurt
  • 0.33 cup peanut butter (100% peanuts, no added sugar/oils)
  • 1 tablespoon vanilla extract
  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda

Instructions 

  • Preheat oven to 350°F (180°C). Line muffin pan with liners. Dice 1 apple, toss with cinnamon and 1 tbsp sugar, set aside.
  • Whisk eggs, Greek yogurt, peanut butter, sugar, and vanilla. Grate in 2 apples and mix.
  • Add flour, baking powder, and baking soda; fold until just combined.
  • Stir in diced, marinated apples. Divide batter into muffin liners.
  • Bake for 22–25 minutes. Cool in pan 5 minutes, then transfer to wire rack.

Notes

For less sweetness, reduce sugar to ¼ cup.
