  • 1 lb ground chicken
  • 1 tbsp olive oil
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 cup water chestnuts, drained and chopped
  • 3 green onions sliced
  • 0.25 cup low-sodium soy sauce
  • 0.25 cup hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp brown sugar
  • 1 tsp chili garlic sauce
  • 1 tsp cornstarch
  • 2 tbsp water
  • 1 head butter lettuce, leaves separated
  • 1 tbsp sesame seeds
  • 2 tbsp fresh cilantro, chopped

Instructions 

  • Separate, wash, and dry lettuce leaves; refrigerate.
  • Mix soy sauce, hoisin, vinegar, sesame oil, sugar, chili sauce, cornstarch, and water.
  • Cook onion in oil until softened, then add garlic and ginger; cook 30 seconds.
  • Add chicken, cook until browned, then stir in water chestnuts and green onions.
  • Pour sauce into skillet, cook until thickened, then spoon into lettuce leaves.
  • Top with remaining green onions, sesame seeds, and cilantro before serving.

Notes

For extra flavor, toast the sesame seeds before adding.
