  • 2 tablespoons olive oil
  • 1 lb shrimp (peeled)

  • 4 cups lettuces (chopped)
  • ¾ cup red onion (chopped)
  • 2 cups cherry tomato (cut in half)
  • 2-3 tablespoons store-bought pesto

Instructions 

  • Heat olive oil in a skillet over medium heat and cook shrimp until pink and opaque, about 3-4 minutes per side.
  • In a large bowl, combine chopped lettuce, red onion, and cherry tomatoes.
  • Add cooked shrimp to the salad and toss gently.
  • Stir in 2-3 tablespoons of pesto until evenly coated.
  • Serve immediately and enjoy!

Notes

For extra flavor, add a squeeze of lemon before serving.
