A quick and flavorful pasta dish featuring succulent shrimp and vibrant basil pesto, perfect for a satisfying meal.

Ingredients

Pasta

  • 12 ounces dry spaghetti or linguine

Shrimp

  • 1 pound large shrimp, peeled and deveined

Seasonings

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes

Cooking fats

  • 2 tablespoons butter
  • 1 tablespoon olive oil

Vegetables

  • 1 pint each cherry tomatoes, halved
  • 2-3 cloves garlic, minced

Sauce

  • 3/4-1 cup basil pesto
  • 1/4 cup freshly grated Parmesan cheese, plus more for garnish

Garnish

  • fresh basil leaves (for garnish)

Instructions 

  • Cook pasta in salted boiling water until al dente, then drain, reserving 1/2 cup of pasta water.
  • Season shrimp with salt, pepper, and red pepper flakes. Sauté in butter and olive oil until pink, then set aside.
  • Sauté tomatoes and garlic in the same skillet for 1-2 minutes. Add pesto, Parmesan, and reserved pasta water, stirring to combine.
  • Toss pasta and shrimp in the sauce until coated. Serve garnished with Parmesan and basil.

Notes

Use fresh basil for the best flavor and adjust pesto quantity to taste.
