  • 1 tbsp olive oil
  • 0.5 sweet onion sweet onion, diced
  • 1.33 lbs 99% lean ground turkey
  • 2 zucchini zucchini, sliced
  • 1 summer squash summer squash, sliced
  • 2 cups cherry tomatoes, halved
  • 0.5 cup pesto
  • to taste Salt and pepper

Instructions 

  • Heat olive oil and cook diced onion for 3-4 minutes.
  • Add ground turkey, cook 5-7 minutes until browned.
  • Add zucchini and summer squash, cook 4-5 minutes until tender-crisp.
  • Stir in cherry tomatoes and pesto, cook 3-4 minutes until heated through.
  • Season with salt and pepper, serve hot.

Notes

Use fresh pesto for best flavor and adjust seasoning as needed.
