Ingredients

Protein

  • 3 cups diced chicken (or shredded chicken)

Vegetables

  • 2 celery ribs celery ribs (diced)

Sauces & Condiments

  • ½ cup basil pesto
  • ¼ cup mayonnaise
  • ¼ cup diced red onion
  • ¼ cup toasted pine nuts
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Optional

  • to taste freshly grated parmesan (Optional)

Instructions 

  • In a large bowl, stir together all ingredients until well combined.
  • Serve immediately or chill in the fridge for later.

Notes

For extra flavor, top with freshly grated parmesan before serving.
