A quick and flavorful dish combining tender chicken, spiralized zucchini, and a creamy peanut sauce for a healthy, satisfying meal.

Ingredients

Protein

  • 2 medium boneless, skinless chicken breasts, sliced

Vegetables

  • 3 medium zucchini, spiralized

Sauces & Condiments

  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon sesame oil
  • 1/4 cup water

Garnishes

  • 2 green onions sliced green onions
  • 1 tablespoon roasted peanuts, chopped (for garnish)

Instructions 

  • Whisk peanut butter, soy sauce, honey, garlic, ginger, sesame oil, and water until smooth. Set aside.
  • Cook sliced chicken in a skillet over medium-high heat for 5-6 minutes until browned.
  • Add zucchini noodles and cook for 2-3 minutes until tender.
  • Pour sauce over chicken and noodles, toss, and cook for 2-3 minutes.
  • Garnish with green onions and chopped peanuts before serving.

Notes

Use fresh ingredients for best flavor. Adjust sauce quantities to taste.
