Ingredients

Dry Ingredients

  • 1 cup all-purpose gluten-free flour
  • 1/4 tsp baking powder
  • 3/4 cup cacao or cocoa powder
  • 1.5 cups organic, raw coconut sugar or maple syrup or honey
  • 1 tsp instant coffee or espresso powder
  • 1/2 tsp sea salt
  • 1 tbsp pure vanilla extract
  • 3 large eggs at room temperature
  • 3/4 cup grass-fed butter, vanilla ghee, or avocado oil
  • 1 cup dairy-free semisweet chocolate chips or chopped dark chocolate
  • 4-6 tbsp crunchy, all-natural peanut butter

Instructions 

  • Preheat oven to 350°F (175°C) and line a 9×13 inch pan with parchment or foil.
  • Melt chocolate and butter in a heat-proof bowl over simmering water or microwave until smooth.
  • Whisk dry ingredients in a large bowl. Cool melted chocolate mixture, then add eggs and sweetener, whisking well.
  • Pour wet into dry ingredients, mix until thick and fudgy. Spread batter in pan.
  • Drop spoonfuls of peanut butter on top and swirl with a knife. Cover and bake for 25-28 minutes.

Notes

For extra fudginess, slightly underbake the brownies.
