These healthy, no-bake cookies combine ripe bananas, peanut butter, and oats for a delicious treat that's easy to make and perfect for a quick snack.

Ingredients

  • 2 cups rolled oats
  • 1 cup mashed banana (~3 bananas)
  • 1/3 cup peanut butter (or almond butter)
  • 1/3 cup chocolate chips, optional
  • 1 tsp pure vanilla extract, optional
  • 1/2 tsp cinnamon, optional
  • 1/2 tsp salt, optional

Instructions 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix mashed banana, peanut butter, vanilla, cinnamon, and salt. Add oats and fold in chocolate chips.
  • Form dough into 8 balls and flatten into cookies on the baking sheet.
  • Bake for 15 minutes, then cool for 5 minutes before serving.

Notes

These cookies are best enjoyed fresh but can be stored in an airtight container for a few days.
