These wholesome cookies combine the natural sweetness of bananas and peanut butter with oats and chocolate chips for a delicious treat.

Ingredients

Dough

  • 1 cup peanut butter (natural peanut butter)
  • 1 cup mashed banana (2 large or 3 small-medium bananas)
  • 2 large eggs
  • 1/2 cup coconut sugar (may substitute with maple syrup, honey, granulated or brown sugar)
  • 1 teaspoon baking soda
  • pinch salt
  • 1 teaspoon vanilla extract
  • 1.5 cups old fashioned rolled oats (use certified GF if gluten intolerant)
  • 1/2 cup dark chocolate chips

Instructions 

  • Preheat oven to 350°F (180°C) and line baking sheets with parchment paper.
  • Mix mashed banana, peanut butter, sugar, eggs, baking soda, salt, and vanilla until combined.
  • Stir in oats and chocolate chips; the batter will be sticky.
  • Drop spoonfuls onto baking sheets, spacing at least 1 inch apart.
  • Bake for 10-12 minutes until golden; cool on wire racks before serving.

Notes

For a healthier option, substitute honey or maple syrup for sugar.
