Delight in fluffy pancakes infused with fresh peaches, perfect for a sweet breakfast treat.

Ingredients

Dry ingredients

  • 2.5 cups all-purpose flour
  • 0.25 cup sugar
  • 2 tablespoons baking powder
  • 1 teaspoon kosher salt
  • 0.5 teaspoon ground cinnamon

Wet ingredients

  • 2 cups milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter (melted)
  • 2 large peaches diced peaches (about ¼-½" pieces, about 2½ cups)

Additional toppings

  • butter
  • maple syrup
  • whipped cream
  • fresh peaches

Instructions 

  • Mix dry ingredients in a bowl. Add milk, eggs, and melted butter; whisk and let rest.
  • Gently fold in diced peaches into the batter.
  • Heat a greased skillet over medium heat. Pour ⅓ cup batter for each pancake.
  • Cook until bubbles form, then flip and cook until golden. Serve warm with toppings.

Notes

Use ripe peaches for the best flavor.
