Delicious and healthy peach oat pancakes that are flourless, gluten-free, dairy-free, and refined sugar-free, perfect for a nutritious breakfast.

Ingredients

Dry ingredients

  • 1 cup oat flour (certified gluten-free)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp salt

Wet ingredients

  • 2 tbsp coconut oil (melted, room temperature)
  • 1 tbsp honey (or maple syrup)
  • 1/2 tsp vanilla
  • 1 egg egg
  • 1 cup peach puree (2 1/2-3 peaches)

Peach topping

  • 1-2 peaches extra peaches for topping, diced

Instructions 

  • Mix dry ingredients in a bowl.
  • Whisk wet ingredients, then add peach puree.
  • Combine wet and dry, then let batter rest for a few minutes.
  • Heat a pan, then cook small batter portions until golden, flipping once.
  • Repeat until all batter is cooked, then top with fresh peaches and serve.
