A quick and delicious vegetarian pasta dish featuring a creamy spinach sauce, perfect for a wholesome meal.
Ingredients

pasta (penne, rigatoni, spaghetti...)

olive oil or extra virgin olive oil
(plus more to serve)

cloves
garlic, finely sliced or minced

baby spinach, washed

fine salt
(plus more to taste)

cream cheese

freshly grated parmesan cheese
(plus more to serve)

ground nutmeg
(or ⅓ of freshly grated nutmeg, or to taste)

Instructions
Cook pasta until al dente, reserving ½ cup of cooking water.
Heat olive oil in a skillet, add garlic, and cook until fragrant.
Add spinach and salt, cook until wilted.
Stir in cream cheese, some pasta water, parmesan, and nutmeg; cook briefly.
Add cooked pasta to the sauce, toss, and serve with extra cheese, pepper, and olive oil.
Notes
Use freshly grated parmesan for best flavor.
