A quick and delicious vegetarian pasta dish featuring a creamy spinach sauce, perfect for a wholesome meal.

Ingredients

Pasta

  • 8 oz pasta (penne, rigatoni, spaghetti...)
  • 1 Tbsp olive oil or extra virgin olive oil (plus more to serve)
  • 2-3 cloves garlic, finely sliced or minced
  • 9 oz baby spinach, washed
  • ¼ tsp fine salt (plus more to taste)
  • 5 oz cream cheese
  • 1 oz freshly grated parmesan cheese (plus more to serve)
  • ¼ tsp ground nutmeg (or ⅓ of freshly grated nutmeg, or to taste)
  • to taste black pepper

Instructions 

  • Cook pasta until al dente, reserving ½ cup of cooking water.
  • Heat olive oil in a skillet, add garlic, and cook until fragrant.
  • Add spinach and salt, cook until wilted.
  • Stir in cream cheese, some pasta water, parmesan, and nutmeg; cook briefly.
  • Add cooked pasta to the sauce, toss, and serve with extra cheese, pepper, and olive oil.

Notes

Use freshly grated parmesan for best flavor.
