Ingredients

Pasta

  • 8 oz Barilla penne pasta
  • 1 tablespoon salt for pasta water

Chicken

  • 2 large chicken breasts sliced into 1/2-inch thick strips
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Flour

  • 3 tablespoons all-purpose flour

Butter

  • 1 1/2 tablespoons Kerrygold unsalted butter

Olive Oil

  • 1 1/2 tablespoons olive oil
  • 5 cloves garlic, freshly minced
  • 1/2 cup Swanson less sodium chicken stock
  • 1 teaspoon lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes

Cream

  • 1 1/2 cups heavy cream, room temperature

Spinach

  • 5 oz fresh baby spinach
  • 2/3 cup freshly grated Parmesan cheese

Instructions 

  • Cook pasta in salted boiling water until al dente, then drain.
  • Season chicken strips with salt and pepper, then dredge in flour.
  • Cook chicken in butter and olive oil until golden, then add garlic and cook briefly.
  • Pour in chicken stock, lemon juice, Dijon mustard, Italian seasoning, and red pepper flakes; simmer.
  • Add heavy cream and spinach; cook until spinach wilts and sauce thickens. Toss with cooked pasta and Parmesan cheese.

Notes

Use fresh spinach for best flavor and texture.
