A quick and flavorful one-skillet dish combining pasta, chicken, and barbecue flavors topped with melted cheese.

Ingredients

olive oil

  • 2 tablespoons olive oil

diced onion

  • 1/2 medium onion (diced)

garlic

  • 1 teaspoon garlic, minced

uncooked rotini pasta

  • 2 cups Rotini pasta (8 oz)

petite diced tomatoes

  • 14.5 oz can petite diced tomatoes

chicken broth

  • 1 1/2 cups chicken broth

barbecue sauce

  • 1/2 cup barbecue sauce

shredded rotisserie chicken

  • 1 medium rotisserie chicken (shredded)

shredded colby jack cheese

  • 2 cups colby jack cheese (shredded)

Instructions 

  • Heat olive oil in a large skillet and sauté diced onion until tender.
  • Add minced garlic and cook for 1 minute.
  • Add pasta, tomatoes, broth, barbecue sauce, and shredded chicken. Bring to a boil, then simmer until pasta is tender.
  • Top with shredded cheese, cover, and let melt.
  • Finish with a drizzle of barbecue sauce before serving.

Notes

Use rotisserie chicken for quick prep and enjoy a cheesy, smoky flavor.
