Ingredients

Oil

  • 2 tablespoons Olive Oil (Can substitute with avocado oil or sunflower oil)

Vegetables

  • 1 medium Yellow Onion (Chopped)
  • 2 cloves Garlic (Minced)

Grains

  • 1 cup Long-Grain White Rice (Rinsed thoroughly)

Broth

  • 2 cups Vegetable Broth (Can substitute with chicken broth)

Spices & Herbs

  • 1 teaspoon Ground Turmeric (Can substitute with saffron)
  • 1 teaspoon Ground Cumin (Reduce for milder flavor)
  • 1 teaspoon Dried Oregano (Italian seasoning works as a substitute)
  • 1 teaspoon Salt (Adjust to taste)
  • 0.5 teaspoon Black Pepper (Freshly ground preferred)

Citrus & Herbs

  • 2 tablespoons Fresh Lemon Juice (Essential for authenticity)
  • 1 tablespoon Lemon Zest (Zest before juicing)

Herbs

  • 1/4 cup Fresh Parsley (Chopped)
  • 1 tablespoon Fresh Dill (Optional)

Garnish

  • 2 tablespoons Toasted Pine Nuts (Can substitute with walnuts or omit)

Instructions 

  • Heat oil in a large pot over medium heat. Add chopped onion and minced garlic; sauté until translucent.
  • Add rice, turmeric, cumin, oregano, and salt; cook for 2 minutes, stirring frequently.
  • Pour in vegetable broth, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until rice is tender.
  • Remove from heat, stir in lemon juice, lemon zest, chopped parsley, and dill. Fluff with a fork.
  • Garnish with toasted pine nuts before serving.

Notes

For extra flavor, toast the pine nuts until golden before garnishing.
