Instructions
Heat oil in a large pot over medium heat. Add chopped onion and minced garlic; sauté until translucent.
Add rice, turmeric, cumin, oregano, and salt; cook for 2 minutes, stirring frequently.
Pour in vegetable broth, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until rice is tender.
Remove from heat, stir in lemon juice, lemon zest, chopped parsley, and dill. Fluff with a fork.
Garnish with toasted pine nuts before serving.
Notes
For extra flavor, toast the pine nuts until golden before garnishing.
