One Pot Cheesy Cajun Beef Rice

A flavorful and hearty one-pot dish combining Cajun spices, lean beef, rice, and melted cheese, topped with fresh spring onions and a spicy mayo drizzle.

Ingredients

seasoning

  • 1.5 tablespoons cajun seasoning
  • 1 tablespoon paprika
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon paprika

vegetables

  • 1 unit onion, finely diced
  • 1 unit small carrot, finely chopped
  • 3 cloves garlic, crushed

meat

  • 455 grams extra lean beef mince

grain

  • 180 grams long grain white rice, dry
  • 480 ml chicken stock

cheese

  • 120 grams colby cheese, grated (or cheddar/red leicester and mozzarella mix)

toppings

  • 2 spring onions chopped
  • to taste salt and pepper

cajun mayo

  • 3 tablespoons reduced fat mayo
  • 3 tablespoons fat free Greek yoghurt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

Instructions 

  • Mix Cajun mayo ingredients in a bowl and set aside.
  • Sauté onion, carrot, and garlic in a sprayed pan for 5-6 minutes.
  • Add beef and cook until browned, then stir in seasonings and tomato paste for 1-2 minutes.
  • Stir in peppers, rice, and stock; simmer covered for 12-15 minutes until rice absorbs liquid. Rest for 10 minutes, then fluff.
  • Top with cheese, melt under broiler, then garnish with spring onions and drizzle with Cajun mayo before serving.

Notes

Ensure rice rests covered for perfect texture and adjust seasoning to taste.
