Instructions
Mix Cajun mayo ingredients in a bowl and set aside.
Sauté onion, carrot, and garlic in a sprayed pan for 5-6 minutes.
Add beef and cook until browned, then stir in seasonings and tomato paste for 1-2 minutes.
Stir in peppers, rice, and stock; simmer covered for 12-15 minutes until rice absorbs liquid. Rest for 10 minutes, then fluff.
Top with cheese, melt under broiler, then garnish with spring onions and drizzle with Cajun mayo before serving.
