A quick and flavorful one-pot meal combining seasoned beef, rice, and fresh toppings for a satisfying burrito bowl.

Ingredients

Vegetables and Liquids

  • 1 tablespoon olive oil
  • 0.5 cup red bell pepper chopped
  • 0.5 cup sweet onion chopped
  • 0.5 cup salsa
  • 15 ounce can black beans rinsed and drained
  • 1 cup frozen fire roasted corn
  • 14.5 ounce can diced tomatoes
  • 4 ounce can diced green chiles
  • 1 cup jasmine rice rinsed
  • 1 tablespoon taco seasoning
  • 0.5 teaspoon chili powder use 1-2 tsp if you like more spice
  • 2 cups chicken broth
  • 1 cup shredded cheddar jack cheese

Salt and Pepper

Instructions 

  • Heat olive oil in a large pot over medium heat. Add chopped bell pepper and onion; cook until softened.
  • Add ground beef; cook until browned. Stir in salsa, diced tomatoes, green chiles, taco seasoning, chili powder, salt, and pepper.
  • Add rinsed rice and chicken broth; bring to a boil. Reduce heat, cover, and simmer until rice is cooked and liquid is absorbed.
  • Stir in black beans and corn; cook for 2-3 minutes. Top with shredded cheese before serving.

Notes

For extra spice, increase chili powder to 1-2 teaspoons.
