A quick and flavorful one-pot meal combining beef, pasta, and taco seasonings for a satisfying dinner.

Ingredients

Meat

  • 1 pound ground beef ((450g))

Seasonings

  • 2 tablespoons taco seasoning

Pasta

  • 8 ounces pasta ((225g, such as penne, rotini, or shells))

Canned Tomatoes

  • 1 can diced tomatoes ((14.5 ounces))

Tomato Sauce

  • 1 cup tomato sauce

Broth or Water

  • 2 cups beef broth or water

Cheese

  • 1 cup shredded cheese ((cheddar, Monterey Jack, or Mexican blend))

Optional Oils & Aromatics

  • 1 tablespoon olive oil ((optional))
  • 2 cloves garlic ((minced, optional))

Optional Vegetables

  • 0.5 cup black beans ((optional))
  • 0.5 cup corn kernels ((optional))
  • 0.25 cup jalapeños or diced bell peppers ((optional))

Instructions 

  • In a large pot, cook ground beef until browned. Add garlic and cook for 1 minute.
  • Add taco seasoning, diced tomatoes, tomato sauce, and broth. Stir to combine.
  • Bring to a boil, then add pasta. Reduce heat and simmer until pasta is tender, about 10 minutes.
  • Stir in cheese and optional vegetables. Cook until cheese melts and vegetables are heated through.
  • Serve hot, garnished with additional toppings if desired.
