A quick and flavorful one-pot meal combining beef, pasta, and taco seasonings for a satisfying dinner.

Ingredients

  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 8 ounces pasta (such as penne, rotini, or shells)
  • 1 can diced tomatoes (14.5 ounces)
  • 1 cup tomato sauce
  • 2 cups beef broth or water
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1 tablespoon olive oil (optional)
  • 2 cloves garlic (minced, optional)
  • 0.5 cup black beans (optional)
  • 0.5 cup corn kernels (optional)
  • 0.25 cup jalapeƱos or diced bell peppers (optional)

Instructions 

  • Heat olive oil in a large pot and cook minced garlic until fragrant.
  • Add ground beef and cook until browned.
  • Stir in taco seasoning, diced tomatoes, tomato sauce, beef broth, and optional vegetables; bring to a boil.
  • Add pasta, reduce heat, and simmer until pasta is tender and liquid is absorbed, about 15 minutes.
  • Sprinkle shredded cheese on top and serve hot.

Notes

You can customize the toppings with additional vegetables or spicy jalapeƱos for extra flavor.
