Ingredients

Dry ingredients

  • 1 3/4 cups rolled oats
  • 1 cup oat milk
  • 1 medium egg
  • 1/4 cup coconut oil (melted and cooled)
  • 1/4 cup maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • Pinch salt

Instructions 

  • Combine all ingredients in a blender and blend until smooth.
  • Preheat waffle maker and lightly grease with cooking spray or coconut oil.
  • Pour batter onto hot waffle plates and cook for 8-10 minutes until golden.
  • Remove waffles and let cool slightly. Add toppings if desired and serve.

Notes

For extra flavor, add fresh fruits or nuts as toppings.
