Delicious and healthy muffins made with gluten-free oat flour and loaded with chocolate chips, perfect for a quick breakfast or snack.
Ingredients
Dry ingredients

oat flour (certified Gluten Free, if needed)

baking soda

Wet ingredients

Greek yogurt

avocado oil

pure maple syrup

coarse sugar (optional)
Instructions
Preheat oven to 375°F (190°C). Line a muffin tin for 8 muffins.
Mix dry ingredients: oat flour, baking soda, baking powder, salt.
Combine wet ingredients: maple syrup, oil, yogurt, eggs, vanilla.
Mix wet into dry, fold in chocolate chips.
Fill muffin liners, sprinkle coarse sugar, bake 20-25 mins.
Cool 5 mins in tin, then transfer to wire rack to cool completely.
Notes
Use certified gluten-free oat flour for gluten sensitivity.
