Wet Ingredients

unsweetened applesauce

mashed ripe bananas
(about 2 medium bananas)

melted coconut oil

Carrots and Nuts

grated carrots
(about 3-4 medium carrots)

chopped walnuts or pecans

Frosting

cream cheese
(softened)

Instructions
Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch pan.
Mix dry ingredients in a bowl. Combine wet ingredients separately.
Combine wet and dry, fold in carrots and nuts. Pour into pan.
Bake for 30-35 minutes. Cool and prepare frosting.
Beat cream cheese, applesauce, and vanilla. Spread over cooled cake.
Notes
For best results, use fresh carrots and softened cream cheese.
