These delicious no-bake energy bars combine dates, cocoa, chia seeds, and nuts for a healthy, satisfying snack.

Ingredients

Dried Fruits

  • 1 ½ cups packed, soft pitted dates ((350 g))

Cocoa Powder

  • cup cocoa powder ((35 g))

Chia Seeds

  • 1/2 cup whole chia seeds ((75 g))

Shredded Coconut

  • 1/2 cup unsweetened shredded coconut ((45 g))

Walnut Pieces

  • 1 cup raw walnut pieces ((125 g))

Dark Chocolate

  • 1/2 cup chopped dark chocolate ((70 g))

Rolled Oats

  • 1/2 cup rolled oats ((50 g))

Vanilla Extract

  • 1 tsp vanilla extract ((optional))

Sea Salt

  • 1/4 tsp sea salt ((optional))

Instructions 

  • If dates are dry, soak in hot water for 15 minutes, then drain.
  • Blend walnuts until coarse flour forms.
  • Add dates and blend into a sticky paste.
  • Mix in remaining ingredients; add water if too crumbly.
  • Press mixture into parchment-lined pan, freeze for 1 hour, then cut into 14 bars.

Notes

Use moist dates for best texture and flavor.
