Ingredients

Oats

  • 3.5 cups rolled oats (Bob's Red Mill)

Nuts and Seeds

  • 1 cup almonds (roughly chopped into 1/4-inch pieces)
  • 1 cup coconut flakes
  • 1 cup pecans (halved or quartered)

Spices and Flavorings

  • 2 tsp salt
  • 2 tsp ground cinnamon

Wet Ingredients

  • 0.6 cup olive oil (California Olive Ranch)
  • 0.5 cup maple syrup
  • 2 tsp vanilla
  • 4 tbsp turbinado sugar (adds crunch to clusters)

Fruits

  • 1 lb strawberries (hulled and sliced into 1/2-inch pieces)
  • 1.5 tsp sugar
  • 0.5 tsp lemon zest
  • 16 oz yogurt (Fage 5% for richer texture)

Instructions 

  • Preheat oven to 350°F (175°C). Mix oats, nuts, coconut, salt, cinnamon, and turbinado sugar. Drizzle with olive oil, maple syrup, and vanilla; toss to combine.
  • Spread mixture on a baking sheet and bake for 15-20 minutes until golden, stirring halfway through.
  • While granola cools, prepare strawberries with sugar and lemon zest. Slice and set aside.
  • Layer yogurt, strawberries, and granola in bowls. Serve immediately.
