Reduced Apple Cider
1cupapple cider(reduced to 1/2 cup)
Dry Ingredients
1/2cupcassava flour
1/2cuptapioca starch
1cupalmond flour
1/2tspsea salt
1tspbaking soda
1tspcinnamon
1/4tspnutmeg
1/4tspcloves
3TBSPcoconut sugar
Wet Ingredients
1/2cupolive oil
1/4cupunsweetened applesauce
2tspvanilla extract
2TBSPapple cider vinegar

Frosting & Sauce
1/2cuppalm shortening
1/4cuptapioca starch
2TBSPmaple syrup
1tspvanilla extract
pinchof sea saltsea salt
1/2cupcoconut cream
1/2cupcoconut sugar
Instructions
Preheat oven to 350°F (175°C). Grease pan and line with parchment.
Simmer apple cider until reduced to 1/2 cup, then cool.
Mix dry ingredients; in a separate bowl, whisk wet ingredients. Combine and pour into pan.
Bake for 20 minutes, then cool completely.
Prepare frosting by mixing shortening, tapioca starch, maple syrup, vanilla, and salt. Make caramel sauce by simmering coconut cream, sugar, and salt until thickened. Frost cake and drizzle caramel on top.
