Meat

  • 1 lb Ground Beef (80-90% lean)
  • 1 tablespoon vegetable oil
  • ½ cup onion (finely chopped)
  • 1 tablespoon chili powder
  • ½ teaspoon garlic powder
  • 1 teaspoon ground cumin
  • ¼ teaspoon dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon salt and pepper (or to taste)
  • 1 cup shredded cheese
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup corn salsa
  • 1 cup pico de gallo
  • 3 avocados diced
  • ½ cup sour cream
  • 1 bunch chopped cilantro
  • lime wedges for garnish
  • 10 large tortillas (flour or corn)

Instructions 

  • Cook ground beef with onions and spices until browned.
  • Warm tortillas and fill with beef mixture, cheese, and fresh toppings.
  • Top with pico de gallo, avocado, cilantro, and a squeeze of lime.
