Delight in these gluten-free, vegan mini apple pies topped with rich caramel, perfect for a cozy dessert or snack.

Ingredients

Crust

  • 1 1/4 cups oat flour (make sure to use gluten-free oat flour)
  • 2 cups rolled oats (make sure to use gluten-free oats)
  • 1 1/2 teaspoons ground cinnamon
  • 2/3 cup coconut sugar (or brown sugar)
  • 1/4 teaspoon salt
  • 3/4 cup refined coconut oil (melted)

Filling

  • 2 cups apples (finely chopped, about half the size of your pinky nail)
  • 2 tablespoons coconut sugar (tightly packed)
  • 1 tablespoon cornstarch (or tapioca flour/starch)
  • 2 teaspoons lemon juice
  • 1 teaspoon vanilla extract

Caramel Topping

  • 2/3 cup coconut cream (NOT milk!)
  • 1/4 cup maple syrup
  • 1/4 cup coconut sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions 

  • Prepare the crust by blending oat flour, rolled oats, cinnamon, coconut sugar, salt, and melted coconut oil until combined. Press into mini pie molds.
  • Mix chopped apples with coconut sugar, cornstarch, lemon juice, and vanilla. Fill the crusts with this apple mixture.
  • Bake at 350°F (175°C) for 20-25 minutes until crust is golden and filling is bubbly.
  • Meanwhile, prepare caramel by blending coconut cream, maple syrup, coconut sugar, salt, and vanilla until smooth.
  • Drizzle caramel over cooled mini pies before serving.

Notes

For best results, use fresh apples and ensure all ingredients are gluten-free and vegan.
