Instructions
Heat oil in a large skillet over medium-high heat. Add turkey, zucchini, onion, peppers, garlic, and oregano. Cook 10-12 minutes, stirring until turkey is cooked and vegetables are tender. Drain excess grease.
Stir in black beans, tomatoes, balsamic vinegar, and salt. Cook until heated through, about 2-3 minutes.
Notes
For extra flavor, brown the vegetables before adding the turkey.
