A flavorful and healthy Mediterranean-inspired dish featuring ground turkey, fresh vegetables, and a creamy yogurt sauce.

Ingredients

Sauce ingredients

  • 1 cup plain yogurt (full-fat)
  • 1 Tbsp lemon juice
  • ¼ tsp garlic powder
  • ¼ tsp dried dill
  • ¼ tsp salt
  • 1 Tbsp olive oil

Main ingredients

  • 1 lb ground turkey
  • 2 cloves garlic, minced
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp freshly cracked pepper
  • 1 cup uncooked rice
  • 1 pint grape tomatoes
  • 1 cucumber
  • ¼ red onion
  • ¼ cup chopped parsley

Instructions 

  • Prepare the yogurt sauce by mixing yogurt, lemon juice, garlic powder, dill, salt, and pepper. Refrigerate.
  • Cook rice according to your preferred method.
  • Cook ground turkey in a skillet with olive oil until nearly done. Add garlic, oregano, salt, and pepper; cook 2-3 minutes more.
  • Prepare vegetables: halve tomatoes, chop cucumber, slice onion, and chop parsley.
  • Assemble bowls with rice, turkey, vegetables, and top with yogurt sauce before serving.

Notes

You can customize the vegetables or add your favorite toppings for variety.
