A quick and flavorful pasta dish combining tuna, fresh herbs, and lemon for a bright Mediterranean taste.

Ingredients

Pasta

  • 12 ounces spaghetti
  • 2 cans albacore tuna (packed in olive oil)
  • 0.25 cup extra-virgin olive oil
  • 1 tablespoon lemon zest
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon red pepper flakes
  • 3 tablespoons capers (drained)
  • 3 cups arugula
  • 0.25 cup flat-leaf parsley or dill (for serving) (finely chopped)
  • to taste freshly ground black pepper (for serving)

Instructions 

  • Boil water with salt, cook spaghetti until al dente, about 10 minutes.
  • Mix tuna, olive oil, lemon zest and juice, salt, red pepper flakes, and capers in a bowl.
  • Drain pasta and toss with tuna mixture. Add arugula and toss briefly to wilt.
  • Taste and adjust seasoning. Serve topped with parsley or dill and black pepper.

Notes

Use fresh herbs for best flavor and adjust seasoning to taste.
