Instructions
Season the salmon fillets with smoked paprika, dried oregano, parsley, chili flakes, and salt.
Heat 1.5 tablespoons of olive oil in a large pan over medium heat. Cook the salmon for 4-5 minutes per side until cooked through.
Add cherry tomatoes, olives, chickpeas, and lemon juice to the pan. Cook for 3-4 minutes until heated through.
Stir in cooked rice and feta cheese, then drizzle with remaining olive oil and lemon juice. Garnish with fresh oregano.
Notes
For extra flavor, sprinkle with chopped fresh oregano before serving.
