A vibrant and healthy Mediterranean-inspired bowl featuring tender salmon, fluffy quinoa, fresh vegetables, and flavorful herbs.

salmon, 3-4 oz each fillet
(bring to room temperature, season with salt and pepper)

Persian cucumbers or 3/4 English cucumber

chickpeas, drained and rinsed

pitted kalamata olives, halved

jalapeño, sliced (optional)
Vinaigrette

cold pressed extra virgin olive oil
juice from one large lemon (about ½ cup)
lemon juice

finely chopped fresh oregano leaves or 1 tablespoon dried

Instructions
Cook quinoa in water or broth until absorbed, then fluff and cool.
Season salmon with salt and pepper, then pan-fry in oil until cooked through, about 4-5 minutes per side.
Mix vinaigrette ingredients in a small bowl.
Combine cucumber, tomatoes, onion, chickpeas, jalapeño, and cooked quinoa; marinate for 10 minutes.
Assemble bowls with greens, top with marinated vegetables, salmon, olives, and herbs. Drizzle with vinaigrette and serve.
Notes
Feel free to add diced avocado for extra creaminess.
