A vibrant and healthy Mediterranean-inspired bowl featuring tender salmon, fluffy quinoa, fresh vegetables, and flavorful herbs.

Ingredients

Protein

  • 1 lb salmon, 3-4 oz each fillet (bring to room temperature, season with salt and pepper)
  • about 1 tablespoon avocado or olive oil for pan frying

Grains

  • 2 ½ cups cooked quinoa (from about 1.5 cups uncooked quinoa)

Vegetables & Greens

  • 5 cups chopped romaine or organic spring mixed greens
  • 3 Persian cucumbers or 3/4 English cucumber (sliced)
  • 1 ½ cups halved baby tomatoes
  • ½ cup sliced red onion
  • 1 can chickpeas, drained and rinsed
  • ½ cup pitted kalamata olives, halved
  • 1 slice jalapeño, sliced (optional)

Vinaigrette

  • ½ cup cold pressed extra virgin olive oil
  • juice from one large lemon (about ½ cup) lemon juice
  • 2 tablespoons finely chopped fresh oregano leaves or 1 tablespoon dried
  • 3 tablespoons finely chopped fresh dill or 1 teaspoon dried
  • 3 tablespoons fresh chopped parsley
  • 4 cloves garlic, grated or minced
  • pinch optional sumac

Instructions 

  • Cook quinoa in water or broth until absorbed, then fluff and cool.
  • Season salmon with salt and pepper, then pan-fry in oil until cooked through, about 4-5 minutes per side.
  • Mix vinaigrette ingredients in a small bowl.
  • Combine cucumber, tomatoes, onion, chickpeas, jalapeño, and cooked quinoa; marinate for 10 minutes.
  • Assemble bowls with greens, top with marinated vegetables, salmon, olives, and herbs. Drizzle with vinaigrette and serve.

Notes

Feel free to add diced avocado for extra creaminess.
