A fresh and flavorful Mediterranean chickpea salad perfect for a quick lunch or side dish.

Ingredients

Main ingredients

  • 2 cups cooked chickpeas
  • 1/4 cup red onions (diced)
  • 2 tbsp fresh parsley (finely diced)
  • 1 to tomato (diced seeded)
  • 2 Persian cucumbers diced
  • 1 tbsp jalapeno (* finely diced)
  • 1/3 cup olive oil
  • 1/8 cup fresh lemon juice (1 lemon)
  • 1 tsp sea salt
  • 1 1/2 tsp cumin

Instructions 

  • Add all salad ingredients into a large bowl.
  • Mix the dressing ingredients in a jar, shake well.
  • Pour dressing over salad and toss to combine.
  • Let the salad marinate for 30 minutes before serving.
  • Serve and enjoy!

Notes

For extra flavor, add a sprinkle of feta cheese or olives.
